The Sicilian fishermans recipe book Take 2 to 4 fresh/frozen fillets place them in a baking pan Cover the fillets with a seasoned or unseasoned bread crumb Lightly sprinkle with Romano cheese Slice a tomato into 1/16 slices and top the fish (roughly an inch or so apart) In a medium size Sautee pan: Sautee ½ stick of butter/ margarine on a medium heat Add 2 tbs of olive oil to the butter to prevent burning 1 tbs Mince fresh garlic ¼ cup of fresh parsley A pinch of salt/pepper Let simmer until garlic is tender (not brown, but tender!) Once garlic is tender add a half cup of your favorite white wine on Low heat for 5 to 10 Minutes Once finished pour over haddock/cod that is covered with tomatoes/cheese/ And breadcrumb. . Cover tray with tinfoil and bake in a 375 degree oven for 20/25 minutes At that point uncover the fish and turn oven on broil, watch very closely So you lightly brown the surface of the fish if you don’t pay attention All will be lost if you burn the fish!! Serving size is between 3/6 people.
